Ingredients….

1 1⁄2 cups rolled oats 1 cup Quinoa flour 1 large egg 1⁄4 cup almond milk 1 tbsp honey 1 orange boiled with cinnamon stick (takes about 1 1⁄2 hours) 1⁄2 tsp Nutmeg 1⁄2 tsp Cinnamon 1⁄2 tsp Ginger

 

Method….

Pre heat the oven to 180 degrees C

1) Place the orange in a pan, cover with water, add a cinnamon stick and simmer for 1 1⁄2 hours. Cool (can be done up to 24 hrs in advance and kept in fridge)

2) Place all ingredients into a blender

3) Blend until you get a firm dough – add more oats if need be (leave to chill for 1 hour minimum)

4) Roll the ‘pastry’ out on spelt flour

5) Use a cookie cutter to make the mince-pie base and top

6) Place about 1/2 tbs of mince meat (I use Meridan organic Mincemeat)

7) Place the mince pies in a pre heated oven, bake for about 10 – 15 minutes (alternative fillings, any stewed fruit, add nut butters to fruit) (alternative toppings – sliced apple with flaked almonds and honey, almond milk and egg wash)
